Santoku 16cm blade length
A Santoku (Eng. knife of the three virtues) is used in Japanese cuisine as an all-purpose knife. The origin of the santoku lies in the changed eating habits; meanwhile, in addition to fish and vegetables, meat is also a frequently consumed food. The blade shape of a western carving knife was combined with that of a traditional hocho.
Santoku, hand-forged blade made of 1.2235/80CrV2. Handle was handcrafted from robinia hybrid with transparent viewing window, spacer made from ebony.
