Santoku damascus steel
A santoku (knife of the three virtues) is used in Japanese cuisine as an all-purpose knife. The origin of the santoku lies in the change in eating habits, with meat now being one of the most frequently used foods alongside fish and vegetables. The blade shape of a western meat knife was combined with that of a traditional Hocho.
